If you've never tried Plov, I highly recommend it.
The national dish of Uzbekistan is an aromatic rice pilaf known as plov. It is enjoyed as a weekday meal and specially prepared for holidays and wedding feasts. Plov has been a cornerstone of Uzbek culture and identity for over 1,000 years, and in 2016 it was added to the UNESCO Representative List of the Intangible Cultural Heritage of Humanity because of its role in the traditions and hospitality of Uzbekistan. FASTER VERSION OF THIS SAME VIDEO: 🤍 In this video, I will show you how to make the greatest palov that will even wow Uzbeks! Let's get started... For making the authentic traditional Uzbek Plov, the ingredients you will need: 5-6 carrots 4 cups of round rice 1.5 cup of vegetable oil 1 big onion 2kg of meat (lamb/beef) 1 teaspoon of Zira (cumin), black pepper, and paprika 1.5 tablespoon of salt Clean and delicious water as needed 3 bulbs of garlic Optional: 2-3 hot peppers (put them same as garlic) Instructions for How to make Uzbek Plov: Heat the oil until its very hot (starts to smoke) Cut the meat into big pieces (about 3cm^3) Fry the meat until golden brown Chop onions and carrots as shown Once meat is ready, throw in the onions and fry until the onions are golden red Then add the carrots and fry until the carrots become loose and soft Add water until the meat is covered Place the garlic and hot peppers on top. Simmer for 10-15 minutes Wash the rice Take off the garlic and hot peppers Gently spread the rice on top of everything Add water so when you put the spatula at 30 degrees angle, the water reaches almost half of the spatula. Keep stirring the rice only Once the water has evaporated, form a dome and make a hole in the center. Place back the garlic and peppers on top of the rice. Seal tight and put fire in the slowest mode. Let stay for 40 minutes. Uncover, flip the top of the rice upside down. Cover for another 10 minutes and it will be ready! Only simple ingredients - but technique matters a lot! Let's make some Rice Pilaf on the stove from scratch. Traditional Uzbek Pilaf Recipe with Lamb - Uzbek Plov Uzbekistan National Dish - Plov Pulao or Pilaf In today’s Eid Special video, will show you how to make Uzbek Pilav. Uzbek Plov (also called Pilaf or Pulao) is the national dish of Uzbekistan and is often made during large gatherings and celebrations, therefore this is the perfect recipe to make for your loved one during Eid or any celebration. This is a one-pot rice dish that is made with long grain rice, tender chunks of lamb, onions, and carrots. Uzbek Pilaf is really simple to make and tastes amazing, especially when served with a yogurt dip and salad. Uzbek pilaf, also known as Uzbek plov, is a popular and delicious rice dish that is typically cooked in a large, heavy-bottomed pot called a kazan over an open flame. Probably being one of the most flavorful rice dishes in the world, it has different versions in Uzbekistan. Also cooked with beef, my choice of meat today is lamb and I will cook this with lamb fat for even more flavor and aroma. Soak the rice in salted hot water for at least 30 mins. 2. Wash and rinse the rice 3 – 4 times until the water is clear, drain and set aside the rice. 3. Cut the meat into large chunks and set aside 4. Cut the tail fat into small pieces and set aside 5. Thinly chop the onions and cut the carrots into thick sticks, batonettes 6. Grind 2 tsp cumin seeds into a coarse powder and set aside. 7. Heat up a large wok shaped pot or Dutch oven and add the tail fat, render the fat on medium heat 8. Discard the unrendered hard pieces and add 1 cup sunflower or linseed oil 9. Once the oil is hot and starts to smoke, add half of the onions, fry until nicely browned and fragrant 10. Next, add the meat and fry for about 10 mins until nicely browned on all sides 11. Once the meat is browned, add rest of the onions, stir and cook for 5 mins 12. Next, add the carrots, stir and cook for 5 mins until caramelized. 13. Add 2 tsp salt and cumin. Stir to combine and insert the garlic bulb into the middle of the pot. 14. Add hot water just barely to submerge the ingredients, 1 cm above the ingredients. 15. Optionally add 1 cup chickpeas at this stage. 16. Switch to low heat and cook for 30 mins on a simmer until the carrots are soft and a nice brown broth is obtained, which is called “zirvak”. 17. Add and evenly layer the rice over the ingredients, add 2 tsp salt over the rice. 18. Add more water if the water level is too low, just to barely submerge the rice. 19. Make couple of holes / dents with the back of a wooden spoon for steam to escape. 20. Once the water is evaporated, bring the rice together in the middle like a mound, avoiding contact with the edges of the pot 21. Cover the rice with a large enough plate and cover the pot with a towel 22. Close the lid on top and let it steam on lowest heat for 45 mins before serving. 23. Remove the plate and the paper towel. Remove the garlic bulb and gently stir the pilaf. 24. Serve in a large plate and garnish with extra meat, chilies and garlic *Disclosure: Some of the links above are affiliate links. We had arrived at the airport in Tashkent at about 4 am in the morning, and at 9 am we were ready to start eating our way through the city. First we met up with Bekruz and Akbar both from the Ministry of Tourism Uzbekistan (Bekruz is the one who invited me to Uzbekistan and arranged everything for us, so thank you Bekruz!), and Ravshan (check out his channel: 🤍 a local food vlogger in Uzbekistan. Two of the most important phrases you should know in Uzbek are: Assalomu Alaykum - Hello / Greeting Rahmat - Thank you Bread Bazaar, Tashkent - We started this ultimate street food tour at the bread bazaar in Tashkent, a market dedicated fully to bread, with a little fruit and other things mixed in. We bought some break, some kaymak, and some fruit and then went to a nearby restaurant where they laid everything on the table for us, along with tea. Uzbek breakfast was a great way to get started. Chorsu Bazaar - The grandest bazaar in Tashkent is Chorus Bazaar, and it’s a perfect place to get a feel of Uzbek culture and food. We first stopped at the food court to try hanum, a type of dumpling filled with potato and somsa. Then we continued to the dome shaped iconic part of the bazaar, filled with fresh meat and spices. It’s one of the coolest market structures anywhere in the world. Plov Center - We kind of had to rush out of Chorsu Bazaar because although they prepare 1,500 Kilos, seriously, of rice plov per day, it only takes 2 - 3 hours before they run out everyday. So we got there, already one of the monster swimming pool pans was finished, but they still had a few others going and serving. Plov is the national dish of Uzbekistan, a food that’s eaten on every and all occasions. For Tashkent plov, it’s pretty heavy on the meat at oil, with rice, chickpeas, and raisins. Also it included, qazi - horsemeat sausage which is a delicacy. It was incredibly delicious, and proper meal experience. Total price - 100,000 UZS ($12.21) Plov is love, remember that when you’re in Uzbekistan. National Food Restaurant - After strolling around for a while in the afternoon, we continued to a National Food restaurant, a laid back family style restaurant that serves all things Uzbek food. Along with a number of dishes, the main dish I was most interested in was the naryn, thin slices of dough mixed with minced meat and horse. It was interesting, and quite good, as were the other dishes. Total price - 110,000 UZS ($13.43) Sultan Suleyman Restaurant - For dinner we went to a bit of a fancy trendy restaurant, and had another platter of food. This time, dough noodle like sheets topped with meat, horse sausage again, and green onions. Total price - 122,000 UZS ($14.90) It was a day of learning, eating, and meeting some amazing people along the way. Thank you for watching this Uzbekistan food tour! 📕Recipe here ❂ Ingredients: 500g. Basmati Indian Rice 500g. Carrots 2 pcs Yellow Onions 400g. Beef 350g. Sunflower oil 1 Tsp Cumin seeds 1 Tsp Turmeric 1 Tbsp Yellow Raisins 1 Tbsp Black Raisins 1 Whole Garlic 2 Red Chili Peppers Salt Water ❂ Cooking Process: ⁃ Cut carrots, onions and meat. ⁃ Add oil to a well-heated dutch oven. ⁃ Add half of the chopped onion to the oil and fry until golden brown. ⁃ Add the beef and salt, sauté until the meat starts to brown, add the rest of the onion. ⁃ When the second part of the onion becomes golden, spread the carrots on top. ⁃ Add seasonings on top: cumin, turmeric, salt, raisins ⁃ Pour water so that it is 1cm above the entire contents of the pot. ⁃ Add whole garlic and chili pepper. ⁃ Reduce heat to medium and cook until the carrots become soft. ⁃ Rinse the rice until the last water is clear and then leave it in a cold water for 20-30 minutes. ⁃ After 20-30 minutes, drain the water and put the rice in the dutch oven on top of the carrots. ⁃ Pour boiling water over the rice so that it covers all the contents by 2 cm. ⁃ Maximize the heat. Make a few punctures in the rice to the bottom. ⁃ As soon as water is absorbed, reduced the heat into medium and cook until rice is ready. ⁃ Cover the rice with a lid and leave for 30 minutes. For the ingredients you need: 5-6 carrots 4 cups of round rice 1.5 cup of vegetable oil 1 big onion 2kg of meat (lamb/beef) 1 teaspoon of Zira (cumin), black pepper, and paprika 1.5 tablespoon of salt Clean and delicious water as needed 3 bulbs of garlic Optional: 2-3 hot peppers (put them same as garlic) Procedure: Heat the oil until it's very hot (starts to smoke) Cut the meat into big pieces (about 3cm^3) Fry the meat until golden brown Chop onions and carrots as shown Once meat is ready, throw in the onions and fry until the onions are golden red Then add the carrots and fry until the carrots become loose and soft Add water until the meat is covered Place the garlic and hot peppers on top. Simmer for 10-15 minutes Wash the rice Take off the garlics and hot peppers Gently spread the rice on top of everything Add water so when you put the spatula at 30 degrees angle, the water reaches almost half of the spatula. Keep stirring the rice only Once the water has evaporated, form a dome and make a hole in the center. Place back the garlics and peppers on top of the rice. Seal tight and put fire in the slowest mode. Let stay for 40 minutes. Uncover, flip the top of the rice upside down. Cover for another 10 minutes and it will be ready!
